Banana Bread Loaf

Ingredients
2 c oat flour or whole wheat flour (or a little less plus flax seed to equal 2 cups)1 tsp baking soda1 tsp salt1/2 tsp baking powder1 c mashed ripe bananas (about 4 med)1 c brown sugar (unpacked)2 lg egg white5.5 oz fat free vanilla yogurt (or 2/3 c light sour cream)1capful vanilla
Directions
Combine dry ingredients in a bowl and set aside. Mix wet ingredients until thoroughly blended. (I like to use a food processor.) Add wet ingredients to dry ingredients and mix until no flour is visible. If making 24 mini muffins, bake for 12 to 15 minutes or until a toothpick inserted in the center comes out dry. If making one big loaf, bake for 45 minutes at 350 F.

Nutrition info is for 15 servings of one loaf.

Sometimes I use whole wheat pastry flour instead of oat flour and it turns out great. A substitute for light sour cream can be fat free vanilla or banana yogurt.
Recipe makes 24 mini muffins. Nutrition is calculated based on oat flour and light sour cream.

    I baked it as a loaf. Nice, a little chewy, but that's not a bad thing. Might need a little more yogurt.
