Gerri's Tomato Sauce

Ingredients
2 large cans, whole tomatoes no salt added6 cloves garlic crushed3 tbsp fresh, chopped basil about 18 leaves2 tsp sea salt or kosher salt1black pepper1 cup chopped onion1 tbsp olive oil virgin1 tsp sugar, optional
Directions
Pour both cans of tomatoes into a deep bowl and crush with your fingers. Set aside.

Heat oil in bottom of a deep skillet over medium heat until shimmering, add onion, garlic and salt. Cook until onion is softened and translucent and garlic perfumes the air. Add tomatoes, bring up to a boil, slowly, lower to a simmer. Simmer for 15-20 minutes, stirring frequently. Add pepper towards the end of cooking. Adjust seasoning to taste. Add basil just before serving. If the sauce is a little sour, add a pinch or two of sugar. Serve with your favorite pasta.
