Mock Mashed Potatoes (Rutabaga)

Ingredients
2 pounds of rutabagas, peeled and cubed4 tbsp olive oil spread1/2 cup milk 1%
Directions
Bring a large pot of water to a boil. Add rutabagas and cook 25-30 minutes until tender.

Heat olive oil spread and milk to a slow simmer.

Puree cooked rutabagas until smooth with mixer or food processor. Add milk mixture and blend until creamy. Season to taste with salt and pepper.

Makes 4 one cup servings.
