3 c. cooked quinoa1 mango cubed1 med. red pepper cubed.25 c. white onion chopped1 can black beans rinsed3 tbs. Red Wine Vinegar2 tbs Safflower OilStevia to taste (approx. 1 tsp will do)Cilantro to taste
Directions
Prepare Barley according to package.
Mix all ingredients- cool and serve over lettuce or plain :)
