Turkey & Vegetable Shepherds Pie

Ingredients
12 ounces extra lean ground turkey2 cups cooked mashed potatoes1 cup frozen corn1/2 cup diced tomatoes1/2 cup diced carrots1/2 cup diced zucchini1/4 cup chopped onions3 tsp minced garlicsalt & pepper to taste
Directions
~brown the ground turkey, onion, carrots, garlic, salt & pepper in a frying pan (there should not be any fat if you bought extra lean)
~drain any fat if there is any
~layer botton of 9x12 pan with cooked turkey, onion, garlic, carrots, zucchini & tomatoes
~layer frozen corn over meat & veg mixture
~smooth a layer of mashed potatoes on top sprinkle with salt & pepper
~bake 20 mins @ 350 degrees F

    I love using ground turkey for my shepherds pie, how ever I used pureed cauliflower in lieu of mashed potatoes. YUM YUM YUM - 2/28/10

    It was really good. I made a few subs as I had a few different ingredients like 95% lean ground beef for the turkey and then spinach instead of tomatoes. I also add cheese on top of everything. It was awesome! - 12/18/09

    I added worcestershire sauce to the turkey and I used a can of all-purpose tomato sauce instead of diced tomatoes. still delicious! - 11/17/09
