Southern Hoe Cake

3 Tbsp Buttermilk Cornmeal MixWater - approx 1/4 cup3 Tbsp canola oil or vegetable oil
Mix cornmeal mix and water.
(No corn meal mix? Use 2 Tbsp self rising corn meal and 1 Tbsp of self-rising flour instead)
Add enough water to thin the corn meal mix. If you like a thinner one add more water.
Heat the oil in pan on medium high heat. When the oil is hot, add the batter then turn the heat down to medium low and let cook until brown. Turn over and cook the other side until brown. Remove from pan and place on paper towel to drain any excess oil. Serve hot.
Makes approx 6 small hoe cakes or two large ones.
Serving size - 1 small hoe cake.
