Molasses Mustard Chicken

Ingredients
2 T molasses2 T Dijon mustard1 T cider vinegar4 boneless skinless chicken breasts (5 oz each)2 t vegetable oilsalt and pepper
Directions
Combine molasses, mustard and vinegar in a shallow, non-aluminum dish just large enough to hold chicken. Use hands to flatten chicken to an even thickness of about 1/2 an inch. Rub with oil on all sides, sprinkle lightly with salt and pepper to taste.
Add chicken to marinade, turning to coat both sides. Let stand 30 minutes at room temperature or refrigerate, covered, up to 2 hours, turning occasionally.
Prepare medium-high grill. Coat grill rack with cooking spray. Grill chicken until meat is white throughout.
Makes 4, 5 oz servings.

    I will add this to my list of "things to do with your basic boneless chicken breast." It was good but not spectacular. Interesting way to get a little more calcium (molasses), and, a good way to empty out one of those mostly empty mustard jars in my fridge! Thanks for the recipe. - 5/17/10
