1 medium onion, chopped4 cloves garlic, minced1 tablespoon olive oil2 medium carrots, finely chopped2 medium tomatoes, chopped1 large can stewed tomatoes no salted added2 cups cooked black beans, drained1 tps chili powder1 Tbs parsley, freshly chopped
1. Saute the onions and garlic in oil in a large sauce pan.
2. Add carrots, tomatoes, herbs, spices, and beans.
3. Cover (to retain moisture) and cook on medium heat for 15-20 minutes, or until the carrots are tender.
