Pumpkin-Sweet Potato Soup

1 can (or 2 cups fresh baked) pureed pumpkin1 can (or 2 cups fresh baked) mashed sweet potatoe1 small diced onion (optional)3/4 tsp ground ginger3/4 tsp ground cumin3/4 tsp curry powder1/4 tsp ground nutmeg2 cups broth (chicken or vegetable)2 cups water
Makes 8 1-cup servings
Saute chopped onion in 1 tsp olive oil until soft
Add spices, saute 30 seconds until fragrant
Add potato, pumpkin, broth and water. Stir to combine, heat through and serve!
Add ins: toss some pepitos (hulled pumpkin seeds) on top for a crunch or a dollop of plain fat free yogurt or greek yogurt. If you prefer a creamier soup, add a few tablespoons of 2%milk or low fat creamer. Enjoy!
