Salsa Fresca

Ingredients
3 medium ripe tomatoes1/2 cup onion (red, yellow, or white)1 jalapeno pepperlime juice from 1/2 a limesalt and pepper to taste
Directions
Chop tomatoes into small cubes, discarding any excess seeds and liquid. Chop onion into small cubes. Finely chop jalapeno. Mix tomatoes, onions and the desired amount of the jalapeno. Use half of the jalapeno for milder salsa. Pour lime juice over ingredients. Add salt and pepper (approximately a half teaspoon of each) and mix ingredients well. Allow to sit at least 10 minutes so the flavors blend.

Serve with chips or over your favorite Mexican dish.
