Chicken Cacciatore in Crock Pot (4 Servings)

Ingredients
4 boneless/skinless thighs 1 large onion, thinly sliced2 large red or green bell peppers, sliced3 cloves garlic, crushed1/2 teaspoon each basil and oregano1 (6 oz.) can tomato pastefresh mushrooms, sliced2 bay leaves1 (8 oz.) can stewed tomatoes salt and pepper to taste2 cups burgundy wineParmesan cheese, for sprinkling before serving (4 Tbls)
Directions
Place sliced onions on bottom of crock pot. Add chicken.

Stir together remaining ingredients and pour over chicken.

Cook on low 7-9 hours or high 3-4 hours. Serve over pasta, with a salad on the side.
