South Beach Sausage and Cheese Breakfast Cups

Ingredients
4 oz Turkey sausage or crumbled turkey bacon1/2 green pepper, chopped1/4 onion, chopped5 lrg eggs1 sm can sliced mushrooms1/2 c. LF shredded cheddar cheese
Directions
Preheat oven to 350 degrees.
Line a muffin pan with baking cups.
Cook sausage, pepper, mushroom and onion for 5 mins or until sausage is no longer pink.
Spoon mixture evenly into bottom of muffin cups.
Scramble eggs in small bowl, pour over mixture in cups.
Sprinkle with cheese.
Bake for 20 mins or until egg is set.

Makes 6 muffins.
