Steak & Veggie Quesadilla

Ingredients
1 tbsp. Olive Oil1/2 medium onion, sliced1 red bell pepper, cut into strips1 medium zucchini, sliced into half moonsSalt & Pepper to taste6 oz. cooked steak, cut into thin strips6 oz. cheese, shredded6 flour tortillas
Directions
Preheat oven to 350 degrees.
Heat olive oil in a skillet and add onion. When the onion starts to soften add the bell pepper, once the pepper is starting to get soft add the zucchini. Season veggies with salt and pepper. Once veggies are well cooked add the steak to heat through.
Warm tortillas and add 1/2 oz of cheese to one side of one tortilla. Take 1/6 of the veggie mixture and place on top of cheese. Top off veggies with another 1/2 oz. of cheese. Fold other side of tortilla over onto itself and place in the oven until cheese is melted, about 5-7 minutes.
You serve with sour cream, guacamole, or salsa.
