1/2 cup plain, nonfat yogurt1/2 tsp. vanilla extract1/4 cup firmly packed brown sugar or 6 tsp of Splenda Brown Sugar1 egg1-1/2 cups pumpkin puree1 tsp. cinnamon1/2 tsp. nutmeg1/8 tsp. cloves1/8 tsp. ginger1 cup rolled oats2 tsp. baking powder1 cup whole wheat flour1/2 cup white flour1/2 cup raisins or dates1/6 cup Now Foods Whey Protein Isolate-Unflavored
Preheat oven to 350 degrees. In a mixing bowl, blend together first five ingredients. Mix in spices, oats, and baking powder; then fold in flour, raisins or dates, and nuts. Drop cookie dough by tablespoons onto a nonstick cookie sheet, and bake for 10 to 12 minutes. Yields 2-1/2 dozen cookies.
