Fautato Salad (cauliflower salad)

1 medium cauliflower4 hard boiled eggs2 cups of diced celery (3-4 large stalks)5 Tbsp. sweet pickle relish5 Tbsp. Kraft Miracle Whip fat free dressing5 Tbsp. fat free mayo2 tsp. yellow mustard (if desired)Pepper to taste
Cut the cauliflower in to 1/2 inch pieces.
Steam or boil until soft.
Drain. Rinse with cold water to cool. Drain.
Put into a large salad bowl.
Peel and chop the hard boiled eggs into 1/4 to 1/2 inch pieces. Add to the cauliflower.
Dice the celery into small pieces. Add to salad ingredients.
Add relish, mayo, Miracle Whip and mustard.
Mix all the ingredients well. Add pepper to taste if desired.
Chill until ready to eat, or overnight.
Makes 10 -12 1/2 cup servings.
