Broccoli Cheese Soup - S Somers

Ingredients
3 T butter1 medium onion2 c chicken broth2 pounds broccoli, chopped1/4 t crushed red pepper1/2 c white wine1 8-oz package cream cheese2 c Swiss cheese1/2 c Parm cheese16 oz 1/2 1/22 T parsley, chopped1 t salt1/4 t pepper
Directions
Melt butter in bottom of stockpot. Saute onion until translucent, about 5 minutes. Add 2 c chicken broth, broccoli, and crushed red pepper. Bring to a boil then reduce heat and simmer for 10 minutes, until broccoli is tender.

Blend the soup with a hand mixer (blender okay) and puree until smooth. Transfer back to stockpot and stir in wine. Simmer for 10 minutes. Add the cream cheese, Swiss cheese, Parm, heavy cream, parsley, salt and pepper.

Stir constantly until cheese are melted and fully incorporated into the soup. Do no allow soup to boil or the cream will break down.

Serve hot.
