Vegetarian Pot Pie

Ingredients
Biscuits, refrigerated dough, 2 servings, cut into 4 piecesCream of Mushroom Soup, 1 can (10.75 oz) Nonfat milk, 1/2 cupFrozen mixed veg - broc/caul/carrots, 2 cupsPotato, raw, 2 medium (2-1/4" to 3-1/4" dia.), dicedGarlic Pepper, Salt, Pepper to taste
Directions
Preheat oven to 400. Spray an 8x8 pyrex pan with nonstick. In a bowl, combine soup, milk, frozen veggies, diced potatoes, garlic pepper, salt and pepper. Pour into Pyrex pan. Dot top with pieces of refrigerated bisquits. Cover with foil, bake for 20 min. Remove foil, bake additional 10-15 min or until bisquits are lightly browned and no longer doughy. Makes 4 servings. Serve with a big green salad with balsamic vinigar and a tiny splash of olive oil. Great comfort food!
