Curried Halibut

Ingredients
1 Tbsp olive oil1 chopped onion1 small chopped zucchini1 small chopped butternut squash1 red pepper1 orange or green pepper1 Tbsp curry powder16 oz frozen fish fillets (sole or halibut) cut into bite-sized pieces1 can crushed or diced tomatoes
Directions
Fry the onion in the oil for 3 minutes. Add zucchini, peppers and squash and saute for another 2-3 minutes until the vegetables start ot soften. Add curry powder and saute for another minute. Stir in fish and tomato sauce. Cover and simmer for 8-10 minutes until the fish is cooked through. Servie over rice or potatoes. Serves 4 people generously.
