Microwave Salmon with Leek and Red Pepper

Ingredients
1 Leek1 red bell pepper2 tbsp Parsleyjuice and rind from 1/2 a lemon 2 fillets wild salmon.5 tsp Paprikasalt and pepper to taste
Directions
Instructions: Put the leek, red pepper, parsley, lemon rind and juice in the bottom of a microwavable dish, stir well and cook for 3 minutes on high. Stir the vegetables, then place the salmon fillets on top, sprinkle with paprika, salt and pepper, then cover and cook on high for 4 1/2 minutes. Leave for 5 minutes to stand before serving.
