Carolyn's Bolognese Sauce

Ingredients
1 lb.Ground Buffalo1 large Onion, finely chopped2 Celery Stalks, sliced1 Tbsp. Flour2 Garlic cloves, crushed1/3 Cup Tomato Paste2/3 Cup Beef Stock2/3 Cup Red Wine13 oz Canned Chopped TomatoesSalt & Pepper to tasteGrated Parmesan Cheese (optional)
Directions
Add the ground meat, onion and celery and cook, stirring for 5 minutes or until the beef is browned. Add the flour, garlic and tomato paste and cook, stirring for about 1 minute.

Pour in the stock and wine. Add the tomatoes and salt & pepper to taste and bring to a boil. Cook, stirring until the mixture has thickened.

Lower the heat, partially cover the pan and simmer very gently, stirring occasionally for about 1 hour.

Serve over whole wheat pasta or spaghetti sauce. Not calculated in the calories index.
