Sweet Red Pepper Chicken Salad

Ingredients

1 boneless skinless chicken breast, boiled1/2 sweet red pepper1 TBS reduced fat mayonnaisesalt, pepper, onion salt, and corriander to taste
Boil the chicken until cooked through and let cool.
Save a small amount of the water to add for moisture.
Chop the pepper and the chicken into pieces and place into a blender or food precessor. Add the mayo, tablespoon of the water, and seasoning. Blend until almost smooth. Add more water if needed.
Serve on a bed of lettuce, mixed greens, or use with crackers or in a sandwich.
Makes 1 serving.
*I usually make 2 servings at a time and save for a second meal.
