Honey Almond Granola

3 cups rolled oats (not instant or 1 minute cooking)1 cup flaked coconut, unsweetened1/2 cup raw honey1/4 cup wheat germ1/2 cup slivered almonds2 Tbsp unsalted butter (may substitute oil of your choice)1 tbsp vanilla
mix honey and butter in a small pan and bring to boil. In the mean time in a large baking dish mix oats, wheat germ, coconut and almonds. When honey mixture comes to a boil, add vanilla and stir. Pour over oat mixture. Stir to coat. Place in a 300 degree oven for 30-45 minutes or until lightly browned. Stir at least 2 times while cooking. If you want clusters, do not stir and once cool break into clusters.
