Eggless Egg Salad

Ingredients
12 oz Silken lite firm tofu3T. light mayo1/4 t honey1/8 t salt1/4 t. turmeric1/8 t dry mustard2T sweet pickle relish2T minced scallions2T minced celery1/8 t black pepper
Directions
Drain tofu and pat dry with paper towels. Crumble or cube tofu into medium bowl. In another small bowl, mix mayo, honey, salt, turmeric, and mustard; add tofu. Mix in remaining ingredients. Refrigerate 30 minutes. Serves 4

    I made this recipe but left out the pickle relish. I too, needed to have more calcium. But I love egg salad. This eggless egg salad is the same one on my package of tofu too. It was great! - 7/24/14
