Vegetarian Manicotti

Ingredients
1 8 ounce package manicotti noodles (14 noodles)1 10 ounce package frozen, chopped spinach1 15 ounce containter low fat ricotta cheese1 package silken tofu1 cup shredded parmesan1 egg1 jar Ragu light tomato basil sauce1 tablespoon Italian Seasoning, I prefer Penzey's Tuscan Sunset (not included in nutrition calc)
Directions
Makes 7 Servings of 2 stuffed noodles and sauce each.

Boil the manicotti.

Mix the tofu, parmesan, spinach (thawed and drained), ricotta, seasoning and egg together.

Stuff the manicotti with the cheese mixture.

Place in an oven safe dish and cover with sauce.

Bake at 350 degrees until hot.
