Gluten-free Choco-mint meringues

Ingredients
Directions
1 egg white1/4 tsp cream of tartardash of salt1/2 c splenda mixed with 1 Tbsp cocoa powder, unsweetened1 tsp vanilla extract1-2 drops peppermint extract
Beat egg white until frothy.
Add cream of tartar and salt, beat until stiff peaks form.
Add sugar/cocoa blend, beat until well combined. (it is best to add the sugar in teaspoon increments, mixing well in between)
Add vanilla and peppermint extracts, blending while doing so.
Scoop onto a greased or pachment-covered cookie sheet.
Place into an oven heated to 375F, and TURN OVEN OFF. Leave oven closed and meringues inside overnight (~8 hours) until oven cools completely WITHOUT OPENEING DOOR.
