14 oz. fresh tomatoes, choppedsmall onion, chopped1 tsp minced garlic1-2 Tbsp olive oil1 tsp fennel seedtsp oregano10-12 leaves basilIf using green or half ripe tomatoes, add about 1 Tbsp brown sugar (to taste), to cut the acid.
Saute chopped onion and garlic in olive oil until the onion begins to brown. Add chopped tomato and herbs. Put a lid on it and let simmer at least 15 minutes, until tomatoes are soft. Taste. If not sweet enough, stir in Tbsp brown sugar. Let simmer at least another 10 minutes. If very watery, take lid off and let some of the liquid steam off.
