SCD French Onion Soup

Ingredients
1 TB butter3 medium onions, sliced5 cups water1 TB apple cider vinegar1/2 tsp dried thyme1 TB honey1/2 cup pumpkin pureesalt and pepper to taste
Directions
Melt butter in a large saucepan over medium low heat. Add onions and saute for 15 to 20 minutes until browned. Add water, vinegar, thyme, honey, pumpkin, salt and pepper. Bring to a bowl and then reduce heat back down to medium low and simmer for 30 minutes. Makes 2 servings.
