Bacon Mushroom & Onion Fritatta

Ingredients
Onions, raw, 2 tbsp chopped *Peppers, sweet, red, fresh, 2 tbsp Scallions, raw, 2 tbsp chopped Mushrooms, fresh, .125 cup, pieces or slices Bacon, 4 medium slices, pre-cooked & drained/patted to remove grease, choppedEgg, fresh, 4 large Cheddar Cheese, .5 cup, shredded Monterey Cheese, .5 cup, shredded Fresh Chives, 1 tbsp chopped
Directions
Heat oversafe skillet on stove over high heat. Add small amount of butter, oil, or cooking spray. Sautee onions, peppers, & mushrooms until onions are clear. Add scallions & bacon to heat through. Whisk eggs with small amount of water and add to pan. Pull sides of eggs to center tilting pan to move more egg to outside. Continue cooking until top off eggs are still soft but no longer able to be tilted. Turn off burner, add cheeses and chives to top of skillet. Place skillet under broiler until lightly browned.
