Sweet Chili Chicken Stir Fry

1 small red onion250 grams chicken breast cut into strips100 grams mange tout (snap peas)100 grams baby corn1 cup chopped fresh broccoli10 grams chilli bean paste1 tbsp rice vinegar2 ml sake1/4 cup soy sauce1 tsp garlic powder1 tsp peanut oil2 tsp brown sugar
Slice onion and chop broccoli, slice chicken into strips. Heat oil in wok. When it's hot, move wok to coat with oil and pour off the excess into a safe container. Add onion and strips of chicken along with soy sauce and all spices and about a quarter cup of water. Stir or flip often until chicken is cooked, then add vegetables. Cook until vegetables are hot but not floppy. (Generally once the broccoli is vivid green, you're done.) Serve immediately. Makes two hearty portions. No need for rice or noodles!
