Thai Cucumber Salad

Ingredients
2 cucumbers, one peeled, one unpeeled, thinly sliced6 baby carrots, shredded1 shallot, finely sliced6 T chopped fresh cilantro1/2 cup rice vinegar1/2 cup Splenda1/4 cup water1 tsp salt1/4 tsp garlic powder1/8 tsp cayenne pepperdash chili powder1/2 tsp fish sauce1/2 tsp lime juice
Directions
Layer cucumbers, carrots shavings, cilantro, and shallots. In a separate container, combine remaining ingredients to make dressing and pour over cucumber salad. Marinate 2 hours. Garnish with peanuts if desired. Makes 6 servings.
