Eggplant Parmesean

Ingredients
1 large eggplant, peeled, sliced, salted and rinsed well1 large egg1C Progresso Italian bread crumbs2C Pasta Sauce (I used Ragu)4oz Part-skim mozzarella4tsp Parmesan cheese
Directions
Coat slices of eggplant with egg and bread crumbs
Bake on parchment paper for about 5 minutes each side
In a casserole dish, layer eggplant, sauce and cheese
Sprinkle with Parmesan and remaining mozzarella
Bake at 350* for another 35 minutes
Makes 4 servings
