Garlicky Split Pea Soup

Ingredients
1# dried split peas6 boullion cubes1/2 cup minced white onion1/2 cup dried parsley1.5 to 2 Tablespoons garlic powder10 cups of spring water
Directions
Rinse and sort peas. Put in soup kettle with all other ingredients. Bring to a rolling boil and reduce to just a little more of a boil than simmer. Cook for 30-60 minutes until the peas are softened.

The recipe yields 10 cups of a brothy pea soup. If you allow it to sit for a few hours on the stove top or in the refrigerator, it will thicken and then can be watered back down to your preferred consistency.

    Instead of boullion I used 1 - 2 tsp. of BETTER THAN BOULLION HAM soup base. Can add more to taste. Less salt. Adds a depth of smoky flavor. Once the split peas are softened I added carrots, celery, any other veggie I had handy. Filling and nutritious. - 3/22/20
