Glorious Garlic Mashed Potatoes!

Ingredients
• 1 Whole Garlic Head• 2 Yukon Gold Potatoes, Peeled• 1/2 Cup Skim Milk• 2 Tbsp. Fresh Parsley, Minced• 3 Cups Water• 1/2 Tsp. Salt• 1/4 Tsp. Black Pepper
Directions
1. Preheat oven to 375°.
2. Remove white papery skin from garlic head, not peeling or separating cloves. Spray with cooking spray, and wrap in foil. Bake at 375° for 1 hour, and cool for 10 minutes.
3. Separate cloves, and squeeze to extract garlic pulp. Set aside, discarding skins.
4. Place potatoes in a saucepan, and cover with water. Bring to a boil, and cook for 15 minutes or until very tender. Drain.
5. Heat the milk in pan over medium heat until hot, not boiling. Add potatoes, salt, and pepper, and beat at medium speed of a mixer until potato mixture is smooth. Add garlic pulp, and stir well.
6. Serve, and enjoy!
