Organic Buckwheat Fruit Pancakes

-2/3 cup Arrowhead Mills Organic Buckwheat Pancake Mix-1 egg, beaten-2 tsp Canola Oil OR Apple Sauce (I use sauce)-2 tsp honey-3/4 cup milk or soy or rice milk-1 tbsp ground flax seed (loaded with Omega-3!)-1/4 cup blueberries, fresh or frozen-1/4 cup starwberries, fresh or frozen, cut into 4ths
Combine all ingredients until lumps disappear.
Heat pan to medium heat. I like to use a small pan and make my pancakes to fill it, so they are all the same size.
Lightly oil pan (I like to use Olive Oil cause it's great for the skin).
Pour in pancake mix for one pancake.
Cook until you see bubbles and the edges begin to cook or look golden. Gently flip with spatula. Cook another 20-30 seconds.
Makes about 4 pancakes if you use a small pan. Top with organic syrup (the fake stuff is really unhealthy, it's worth the extra money to buy it real) and/or fruit preserves. You could also substitute other fruits and/or nuts, carub, etc.
These pancakes stay very well when kept in the fridge, so don't be afraid to make a batch ahead of time for the rest of the week. They also make a great little snack, they aren't just for breakfast!
