Bran Flaxseed Muffins

Ingredients
Nutritional information is calculated with raisins included in recipe. Oil used to coat pans not included.1 1/2 c. white flour3/4 c. flaxseed meal3/4 c. oat bran1 c. brown sugar1 tsp. baking powder2 tsp. baking soda1/2 tsp. salt2 tsp. cinnamon1 1/2 c. carrots, shredded2 apples peeled and shredded1/2 c. raisins (optional)1 c. chopped or sliced almonds3/4 c. 1 % milk2 eggs, beaten1 tsp. vanilla
Directions
Mix together dry ingredient. Stir in carrots, apples, raisins, and nuts. In separate bowl, combine milk, beaten eggs, and vanilla. Add to dry ingredients and stir until ingredients are moistened. Do not over mix. Fill lightly oiled muffin tins 3/4 full. Bake at 350 for 15-20 min. Yields15 muffins.
