veggie meatloaf

Ingredients
1 lb or so ground beef1 egg3/4 c grated carrots8 diced mushrooms3 cloves garlic1 oniona few tbsp bread crumbs (seasond for flavor)2 tsp worcestershire saucejust over 1 cup ketchup (removing 3 tbsp for topping)salt/pepper to taste1 zucchini1/2 red pepper1/2 green pepper1 tsp dried thyme1 tsp dried oregano1 tsp basil
Directions
chop all veggies as small as you can, saute till soft with cooking spray or a tsp water. when cool add all rest of the ingrediants together except for reserved ketchup and worcestershire. put in a loaf pan mix worcestershire and ketchup on top for a glaze. bake 1 hr or untill done....drain out any extra liquid!...
makes abutt 10 piecess depending on loaf pan
