All in One Protein / Energy Bars

Ingredients
3 scoops (1/2 Cup) Dymatize whey protein isolate 1/3 Cup Almond flour 1 Cup Quick cooking or original oatmeal 4 Tbsp Splenda 1/3 Cup Craisins (or 1 pack- 100 calories snack size) 4 tbs Nestle Toll house Chocolate morsels8 oz Chobani Non- fat plain Greek Yogurt 1/2 Cup Power Peanut Butter 1 tsp vanilla extract1/2 tsp cinnamon** Note: 1. For non peanut butter lovers, use 1/4 Cup canola oil as substitute 2. Greek yogurt can be replaced with Silken tofu, apple sauce, mashed pumpkin/ banana. I choose Greek yogurt for the extra protein.
Directions
1. Preheat oven to 350 degrees F. Lightly greased 9 x13-inch baking pan with nonstick cooking spray. For easy removal, line the pan with parchment paper/ alum. foil (or just leave the bars in the pan)
2. Mix dry ingredients and set aside. In a separate bowl, mix the yogurt, Peanut butter, and vanilla extract. Add to the dry and mix well. May have to use your hands as the batter will be very thick.
3. Transfer batter to prepared pan and spread evenly. Bake for 20-25 minutes (or until sides are browned). Remove from oven, cut into 15 bars.

    I've used coconut flour in cooking but not baking, but I don't see why you can't do that. Thank's for the great idea!
