Low Carb Hearty Vegetable Soup

Ingredients
2 medium zucchini cubed8 cloves garlic, chopped4 stalks celery, diced2 cups frozen broccoli6 medium carrots, sliced1 small parsnip, sliced4 large onions, chopped2 tbl salt1/4 tsp red pepper flakes1/2 cup tomato paste10 cups water1 tbl olive oil
Directions
Sautee the onions in the olive oil in a 6 quart stock pot. Add the vegetables. Add seasoning and tomato paste. Fill with water, up to 1 inch from the top. Bring to a boil, then turn down to a simmer for 2-3 hours.
