Tomato Basil Soup

1 tablespoon extra virgin olive oil1 white onion, chopped1 or 2 cans of diced tomatoes4 to 6 cups of 99% fat free chicken brothsalt, to tastepepper, to tastedried or fresh basil, to taste
Makes about 8 1-cup servings
1) saute the chopped onion in the olive oil until the onions are soft and translucent
2) add the canned tomatoes and saute for about 2 minutes
3) add the chicken broth
4) simmer for 25-30 minutes
5) taste and then add the seasoning
6) either serve as is, or blend until smooth
Serving suggestions-excellent with multi-grain crackers. This recipe also freezes very well.
