Homemade Venison Sausage 4oz serving

Ingredients
2 lb (32oz) Ground Venison1 Tablespoon salt1/2 cup water1 1/2 Teaspoon liquid smoke1/2 Teaspoon onion powder1/2 Teaspoon garlic powder1 Tablespoon mustard seed1/2 Tablespoon crushed red pepper
Directions
Mix ingredients very well.
Form into three slender sticks.
Wrap in plastic wrap and refrigerate overnight.
Bake on foil covered oven rack for one hour at 300 Degrees.

Tips: Use rubber gloves when mixing so your hands don't smell like liquid smoke for two days. Use heavy duty foil on your oven rack. Turn sticks a couple times while cooking so that they brown all the way around. Enjoy!

    This is a great basic recipe which can be built upon in any number of ways. I think to start off, I will use a bit more red pepper in the next batch to spice it up a bit - we like things a bit spicy :) - 3/29/11
