Ingredients
1 Whole Chicken Breast or 2 Boneless Skinless Chicken Breasts cubed or diced2 ~14oz cans Low Sodium/Low Fat Chicken Broth2 ~14oz cans Diced Tomatoes 2 ~4oz cans Green Chilis10oz Frozen Corn1 Whole Onion chopped1tbsp Extra Virgin Olive Oil1tbsp Ground Cumin
Directions
Heat Extra Virgin Olive Oil in a pot on medium heat. Add Onions, Cumin and Chicken, cook until onions are transparent, about 5 minutes. Add Canned Tomatoes, Chicken Broth, Frozen Corn and Canned Green Chilis, simmer for 20-25 minutes.
