Mayonnaise Cake

* Mayonnaise, regular (mayo), 1 cup * Granulated Sugar, 1 cup * Water, tap, .75 cup (8 fl oz) * Vanilla Extract, 2 tsp * *Flour, white, 2 cup * Salt, .5 tsp * Baking Soda, 1.5 tsp * Cocoa, dry powder, unsweetened, 4 tbsp
Preheat oven to 350F. Grease and lightly flour 2-8 or 9 inch round or one 9 x 13 cake pan(s).
Sift together the flour, salt, baking soda and cocoa.
Mix together sugar, mayonnaise, water and vanilla in large mixing bowl. Slowly add dry ingredients then mix with hand mixer for about 2 minutes.
Place in cake pan(s) and bake in oven for 30 minutes or until done (when toothpick is inserted in middle of cake and comes out clean).
When completely cool, ice with favorite icing (mine happens to be the Busy Day Chocolate Icing).
