Ingredients
500 gm Ground Pork (mince)1 cup grated carrot1 tin water chestnuts drained (sliced & diced) 2 large cloves garlic (chopped finely)100 gm Spring onions (chopped) separate green from white 1 cup bamboo shoots3 tblsp oyster sauce3 tblsp kecap manisSplash sesame oil2 tblsp peanut oil (cooking)8 iceberg lettuce leaves (cups) washed & drainedseasoning
Directions
Prepare iceberg lettuce leaves - pull apart, wash and leave to once side. Chop spring onions keep white part separate from green part. Heat peanut oil in pan & cook chopped spring onion (white stalks only) for a few minutes. Add pork mince and brown. Add carrot, chestnuts, oyster sauce, kecap manis & splash of sesame oil. Stir & simmer until sauce thickens to a syrupy consistency. Lastly add green chopped spring onion & bamboo shoots. Spoon into lettuce cups and wrap. Serve immediately. Season to taste.
