Rumbamel's 10 Cheese Mashed Taters

Ingredients
-2 lbs of red potatoes chopped (I leave the skins on for vitamins)-2 C chopped onions-3 C Fat Free chicken broth like Fit & Active from Aldi-1 C Shop n Save's 6 cheese Italian shredded cheese-3/4 C Kraft's 2% Mexican Four Cheese shredded cheese
Directions
--Chop the onions and potatoes and put in a med/large pot with the broth and cover over high heat until boiling. Remove lid and stir occasionally. Cook until potatoes are almost mushy.

--Remove from the heat and let sit to cool a bit. You can then puree in a blender/food processor or mash. It will splash if you try to use a mixer. After mashing, then add the cheeses and mix well again. You may want to reheat a bit and stir again. If still too moist for your liking this process will help to "air" it out.

--Makes about 6 C or 12 servings of 1/2 C each.
