Broccoli, Chicken & Cheese Casserole

Ingredients
1/2 medium onion, diced3 cloves garlic, minced2.5 C low sodium / fat free chicken broth or vegetable broth1 C brown rice1lb / 500g broccoli fresh or frozen (thawed)4 portions of laughing cow cheese spread125g low fat cheddar cheese
Directions
In a saucepan, saute onion and minced garlic with a small amount of broth until fragrant. Add remaining broth and bring to a boil. Add brown rice, stir and cover; reduce heat to low and simmer for 45 minutes until tender.

Finely chop the broccoli and set aside. Add laughing cow portions, shredded cheddar and chopped broccoli to the cooked rice, and stir well.

Spray a small casserole dish with non-stick cooking spray, add rice mixture to the casserole and bake uncovered at 200C / 400F oven for 15 minutes.

Makes 10 half-cup servings.

    btw, Laughing Cow cheese wedges are available in just about any major food chain. sometimes, they are with the cream cheese; more commonly, they are in the specialty cheese department or occasionally, in some Walmarts and Safeways, with the specialty breads. - 3/31/10

    I wouldn't know where to get laughing cow portions. I'd just go for a chicken baked on top of the rice and broccoli and cheese over the top - 11/16/09
