Andrew's Carrot Cake

Ingredients
Cake:4 C. Raw Carrots, Shredded2 C. Flour2 C. Sugar1 C. Apple Sauce4 Eggs2 tsp. Baking Soda2 tsp. Baking Powder1 tsp. CinnamonFrosting:8oz Pkg. Neufchatel Cheese1/2 Stick Butter, Softened1.5 C. Powdered Sugar1 tsp. Vanilla Extract
Directions
Preheat oven to 300 degrees.

Shred Carrots. Mix all Cake ingredients except carrots. Once mixed, Stir in carrots until well coated. Pour into a 9"x13" pan. Bake for 1 hour, or until a knife inserted in the middle of cake comes out clean. Let cool.

Frosting:
Combine all ingredients in a mixing bowl and mix until well blended. Spread on cooled cake.
