Ingredients
1 cup unQuinoa (1 serving =.25 cup dry) President Fat Free Crumbled Feta, 6 oz Trader Joes Greek Kalamata Salad, 1 jar, drained, rinsed and choppedCherry Tomatoes, 12 oz, halvedTrader Joes Artichoke Hearts in water, 1 can, drained and choppedFresh mint, choppedfresh ground pepper to taste1-2 lemons juiced (1/4 cup)
Directions
Prepare quina according to package directions. Cool. Mix all ingredients together. Makes 8 one cup servings.
