Handmade Ricotta Gnocchi

Ingredients
1 lb whole milk ricotta1/2 c fresh parmigiano-reggiano1 c flour2 t salt1 large egg, beaten slightly in small bowlCombine all ingredients in large bowl except 1/2 c flourMix together with hands until forms a ball. Put dough on wooden board and sprinkle with remaining flour, knead until no longer sticky.Break out into small balls, about a handful. Roll into strips and cut into 1 inch pieces.Sprinkle with flour and spread on platter until ready to boil or freeze until ready to cook.
Directions
Cook in boiling water until floating.

    This has got to make more than 1 serving. Lets say it makes 25 gnocchi. That would be only 65 Calories each. Please let us know how many it really serves. - 12/11/09
