Ingredients
4 whole boneless ,skinless ,chicken breast1/2 cup Shredded Mozzarella (low fat)1/2 cup Frozen Broccoli Floretts1/2 cup Frozen Spinach1 Medium Tomatoe, chopped1tsp Garllic Powder1tsp Onion Powder
Directions
Preheat oven to 350.Mix all ingredients except chicken and 1/4 cup mozzarella in small bowl, set aside. Cover chicken breast in plastic wrap and beat flat ( a rolling pin works well). Put ingredients from bowl in center of checken breast and wrap them around tightly.( you can secure chicken with toothpick if desired)Place chicken on cookie sheet or round cake pan(if you like more juice, keep in mind if using cake pan it will take longer to cook)Sprinkle remaining cheese on top of the chicken breast and place in the oven.Bake for 30-35 minutes or until chicken is fully cooked.serve with your favorite pasta.
-I recomend whole wheat penne past Awith a lite basil pesto(pesto avilable in dry packets at the grocery store)

    This is very good I had something similar at a restaurant but they put feta and parmesean cheese inside the chicken breast too, it was DELISH! - 11/27/07

    Great recipe! I need to get a meat pounder so I can get the breasts nice and thin, other than that they are delicious. I used some extra spices that I prefer, but I loved it and would definitely make it again! - 11/7/07
