Crazy Chicken Casserole

4 boneless, skinless chicken breasts6 cups water1 tsp salt2 beef bouillion cubes16 oz bag frozen mixed vegetables1/4 cup cornstarch1/2 cup water 3 cups Bisquick baking mix, any kind2 cups skim milk
Boil chicken breasts in 6 cups water. Add 1 tsp salt and 2 beef bouillion cubes. Cook til no longer pink inside, about 45 minutes if frozen, 35 minues if thawed. Remove meat from water (don't dispose of the water...it is the broth for the gravy), cut into bite-size pieces. Put the veggies in the bottom of a 13 x 9 baking pan, put chicken pieces on top then stir to combine. Make the gravy by thickening the broth with the cornstarch dissolved in 1/2 c. warm water. add more salt & pepper to taste, then pour gravy over the chicken and veggies. Whisk together the baking mix and milk until the consistancy of chilled pudding. Spoon evenly over chicken mixture, be sure to go right to sides of pan to seal in filling. Bake in 400 degree oven for 45 minutes, until crust is golden brown. Makes 12 (1 cup) servings.
